Seven Eats

At the beginning of Food month, I started a list of all the different meals/snacks I came up with to eat. After 4 weeks of eating only chicken, spinach, eggs, multi grain bread, sweet potatoes, apples and avocados--here is what my days consisted of!


Chicken Meatballs (ground chicken, sautéed spinach, multi grain bread put through food processor to make bread crumbs, eggs and spices--form into small or large meatballs to make meatball sandwiches, eat with scrambled eggs or sweet potatoes)

Chicken Burgers (same ingredients as above, shape into burger patties, bake to perfection and then throw them on the grill to blacken them up! Serve on multi grain bread with sliced avocados and spinach leaves as a topping.)

Chicken Meatloaf (same ingredients as above but added diced apples for a sweet addition)

Spinach Stuffed Chicken Breast (Take thin sliced chicken breasts, put a small handful of spinach on each, add desired spices and then roll the chicken around the spinach. Use a tooth pick to hold each rolled chicken in place. As chicken bakes, spinach wilts and allows for a very tasty mixture.)

Guacamole (Avocado slices in food processor and add pepper, garlic powder and cayane pepper. Guacamole can be spread on all chicken dishes or used as dipping sauce for sweet potato french fries or bread chips)

Chicken Salad (Bake chicken and cut into small squares. Continue using standard chicken salad recipe but substitute the mayo with the above guacamole. Add diced apples for a sweet addition)

Sweet Potato French Fries (Cut sweet potatoes into small french fries, about 1/4 inch thick. Place on baking sheet and cover with pepper, garlic powder and paprika.)

Bread Chips (Pick up a loaf of multi grain bread from a local bakery. Slice the bread in 1/4 inch pieces, then cut slices into smaller, bite-sized pieces. Place on baking sheet and cover with pepper, garlic powder and herb seasoning. Bake at 425 for about 15 minutes or until pieces are hard/crunchy. Eat solo or dip with guacamole. Use this as a wonderful substitute when the craving for chips comes around!)

Sweet Potato and Apple Chips (In food dehydrator, put sliced potatoes/apples on trays and dehydrate for 9 hours. These are the perfect substitute for chips!)

Egg Sandwiches (Scrambled eggs and sautéed spinach on multi grain bread. Top with guacamole spread)

Pulled Chicken Thighs (Boil chicken thighs with spices and then pull for sandwiches or to top off a salad.)

Sweet Potato Hash Browns (Sauté grated sweet potatoes and cinnamon in a pan--blacken it up a little bit for best taste. So good.)

Egg Salad (Prepare egg salad as normal but substitute the mayo with the above guacamole.)

Breaded Chicken Breast (In food processor, make bread crumbs with multi grain bread. Break and mix a couple eggs. Dunk the chicken in egg and then roll/coat in bread crumbs. Bake until tasty crunchy golden.)

Fancy Fried Eggs (Cut a circle out of the middle of a piece of toast. Put the toast on a frying pan and crack an egg into cut out center. Fry egg, flip and fry again.)

Baked Apples (Bake apple slices with cinnamon, a nice little dessert.)

Mashed Sweet Potatoes (You know, just mashed sweet potatoes.)

Avocado Sandwich (Sliced avocado on toasted bread, top with spices.)
